Pat's Kickin' Chicken Spaghetti Squash w/ Squash Sauce

Introduction

Number of Servings: 4

Ingredients

    8 - Cups of Cooked Spaghetti Squash
    4 - 8 oz. Skinless Chick Breasts
    SAUCE:
    1 - Medium Yellow Onion
    1 - Large Bell Pepper (Green, Red, Yellow or Orange)
    1 - Tsp Minced Garlic
    1 - Lrg. Fresh Tomato
    1 - 14.5 oz Can of Petite Diced Tomatoes (Italian Style)
    1 - 14.5 oz Can of Petite Diced Tomatoes (Fire Roasted)
    1 - 12 oz Package of Birdseye Frozen Winter Squash
    1.5 Cups of Fresh Mushrooms
    1 - Tbls Lemon Pepper
    1 - Tbls Black Pepper
    3 - Tbls Italian Seasoning

Tips

I have seasoned and marinated my Chicken Breasts in Italian Dressing , and also put a Cajun Rub and grilled it ... BOTH are excellent!


Directions

Pre-Heat Over to 400 Deg.
1. Cut the Spaghetti Squash in half length ways. Clean all of the seeds out and then poke the outer skin several times with a fork. (This helps the squash cook more evenly.)
2. Lay the Squash down face down (Outer Shell Up) on a Cooking Sheet place in the over for 30-40 minutes. (You may season the inside of the Spaghetti Squash before cooking if you choose)
3. Once the Squash is done let it cool down, then with a spoon and fork clean the inside of the squash out. The meat of the squash should come out stringy like spaghetti.
SAUCE PREPARATION:
1. Add the onion, Fresh Tomato, Bell Pepper and Garlic into a saucepan at a low heat. Cook until the onions are just starting to get clear.
2. Then add all of the rest of the ingredients and mixing thoroughly. Bring to a boil and then turn down and let simmer while the Spaghetti is cooking.
CHICKEN PREPARATION:
1. Grill or Bake the Chicken Breasts and season it anyway you like it.

Your family and guests will never know they are not eating Spaghetti!
