Baked Parmesan Spaghetti Squash Casserole

Introduction

Number of Servings: 8

Ingredients

    1 lb ground chicken or turkey, extra lean
    1.5 cups chopped onion
    1 cup chopped red bell pepper
    1.5 cup chopped fresh tomato
    1 small can (398 ml) tomato sauce
    1 6 oz can tomato paste
    6 cups cooked (no oil) spaghetti squash
    1.5 cup grated parmesan cheese, divided

Directions

1. Cut spaghetti squash (I used 2 small ones) in half, scrape out seeds and bake cut side down at 375 degrees until tender.
2. Meanwhile, cook veggies in nonstick pan with cooking spray for about 5 minutes. Add lean ground turkey or chicken and cook through.
3. Season how you like with salt, pepper, garlic, etc. Add tomato sauce, tomato paste and check seasoning level again.
4. Mix cooked spaghetti squash with meat mixture. Stir in 1 cup of parmesan cheese and sprinkle on 1/2 cup. Bake in 375 degree oven for 25-30 minutes.

Serving Size: Makes 8 approximately 1 cup servings
