1/2 cup whole wheat flour
1/2 cup barley flour
3/4 cup quick cooking oats (dry)
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 cup canola oil
1/4 cup honey
1 tsp vanilla
1 large apple, peeled, cored, shredded
1/4 cup raisins
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
This is a fairly versatile recipe. Try other nuts (chopped) in place of the seeds, or other chopped dried fruit in place of the raisins.
Whisk egg. Add oil, honey and vanilla, whisk together. Pour into dry ingredients, stir until mostly combined.
Fold in apple, raisins, and seeds.
Drop by spoonfuls onto greased cookie sheet.
Bake at 350F for about 12-14 minutes or until nicely browned. Cool on racks & enjoy!
Serving Size: Makes 24 small cookies.
