Oatmeal Blueberry Muffins

Number of Servings: 12


    1 c. + 2 T. Flour
    6 oz. yncooked oats
    1/3 c. + 1 T. sugar
    1 T. baking powder
    1/2 teaspon salt
    1 c. skim milk
    1 c. oil
    1 c. blueberries fresh or thawed frozen
    1 teaspoon cinnamon


1. Preheat oven to 425 degrees.
2. Line muffin cups with paper baking cups. Set aside.
3. In mixing bowl combine flour, oats, 1/3 c. sugar, baking powder and salt.
4. In small bowl, using fork, combine milk, egg, and oil.
5. Addto flour mixture and beat until well blended.
6. Fold in blueberries.
7. Pour into cups.
8. Combine remaing T. sugar with cinnamon and sprinkle on top of muffins.
9. Bake for 20-25 minutes or until lightly brown.

Serving Size: makes 12 muffins
