Introduction

Eggplant are things I buy and let sit until they go bad quite often. I have a problem deciding how to fix them in a low cal way quite often. This dish is the result of that search for me. It is easy and fairly quick. Eggplant are things I buy and let sit until they go bad quite often. I have a problem deciding how to fix them in a low cal way quite often. This dish is the result of that search for me. It is easy and fairly quick.
Number of Servings: 4

Ingredients

    You will need a large skillet with lid for this dish
    2 to 3 sprays butter flavor cooking spray
    1/2 Eggplant, unpeeled and cut in 1/4 inch rounds
    1 tsp Italian herbs seasoning mix
    1 tsp ground tumeric
    1/4 tsp ground black pepper
    1 cup thinly sliced onions ( approx 1 medium)
    2 large Tomatoes peeled and sliced 1/4 inch thick slices
    1/2 cup shredded 2% Mexican four cheese blend



Tips

I prepared this with "A Taste Of India" Marsala Rice and Lentils. The two were a very complimentary combination


Directions

Spray skillet with Pam. Place eggplant rounds in a single layer around skillet until the skillet is bottom is filled. Sprinkle with herbs, tumeric and pepper. Cook on medium high heat for about 1-1/2 minutes on each side. reduce heat to medium. Place onion slices under each round and cook another two minutes. Flip onion and eggplant rounds. Continue cooking another two minutes. Top with tomato slices covering the eggplant and onion rounds. Sprinkle with 4 cheese blend. When cheese begins to melt the dish should be ready to serve


Serving Size: 4 liberal servings approx 1/2 cup each
