Aunt Barb's Home-Style Chicken-Noodle Soup (for the microwave!)

Introduction

This is my favorite chicken soup recipe. Nobody will guess you made it in the microwave. This is my favorite chicken soup recipe. Nobody will guess you made it in the microwave.

Ingredients

    1 (3-lb.) broiler-fryer chicken, cut up (wings omitted)
    4 cups water
    3/4 cup chopped onion
    3/4 cup chopped celery
    3/4 cup chopped carrot
    1 Tablespoon chicken bouillon granules
    1-1/2 teaspoons poultry seasoning
    1 teaspoon salt
    1/2 teaspoon black pepper
    1/2 package (or 6 oz.) of wide egg noodles
    1 can good chicken broth (optional, see *note)

Directions

In a microwave safe, deep 4-quart casserole, arrange chicken (omit wings) with bony pieces in the center, and meaty pieces to the outer edges. Add water. Stir in onion, celery, carrot, chicken bouillon granules and poultry seasoning. Add salt and pepper. Cover. Microwave on HIGH for 25 minutes or until the soup is beginning to boil. Microwave at 30% power, or MEDIUM LOW for 15 minutes. Rearrange the chicken pieces. Stir in noodles, being sure the noodles are under the broth. Cover. Microwave at 30% power, or MEDIUM LOW for another 30 minutes, or until the noodles and chicken are tender, stirring several times and giving the dish a half turn once (if you do not have a rotating device in your microwave). Remove chicken pieces and skim excess fat from the soup. Remove and discard the bones and skin from the chicken. Cut up chicken and return 1-1/2 cups of chicken for 6 servings. Refrigerate remaining chicken for another use. Microwave soup at full power, or HIGH for another 5 to 6 minutes, or until heated through. *Note: At the end if the soup does not look soupy enough, add a can or more of good chicken broth and increase the heating time accordingly. Makes about 6 1-cup servings.
