    1/2 lb of Broccoli finely chopped
    1/2 lb Bok Choy chopped
    14 oz Silken Tofu (extra firm)
    1 Cup Fat Free Plain Greek Yogurt
    1 Cup Silk Unswsileetened Original Almond Milk
    1 Cup Chicken Broth (or 1 cup water & 1 chicken bouillon cube)
    1-2 Tbsp. Onion Powder
    1-2 Tbsp. Garlic Powder
    Salt & Pepper to taste
    2 Tbsp. President Fat Free Feta Cheese crumbled or Vegan Feta Cheese Substitute (optional)


• In a blender or food processor, put tofu, greek yogurt, almond milk, broccoli & bok choy and puree until creamy & smooth.
• In a pan on the stove bring chicken broth to a boil over med-high heat, then turn heat down to medium low.
• Add in your tofu & vegetable mixture, onion & garlic powder along with salt & pepper and bring to a boil.
• Turn heat to low and cook for 5-7 minutes.
• Remove from heat, spoon into bowls, top with feta if desired and serve

Serving Size: Makes 3 2-cup servings
