MY Homemade Upside-down Meat Loaf



Introduction

Flip it before it cools and you'll have a frosted meatloaf.

I'm going to try it in a muffin tin next time, so I can freeze individual meat loaves.

Number of Servings: 8

Ingredients

    Mix together:
    1 lb ground turkey,
    1 small diced onion,
    1/2 c panko, matzo meal or ground bread
    crumbs,
    1 egg.
    ====================
    For bottom of pan:
    1/2 c brown sugar
    1/2 c ketchup (or low-sodium ketchup)
    (this will improve your nutritional info)





Directions

Heat over to 350 degrees

Spray loaf pan with Pam.

Spread the brown sugar in the bottom of the baking pan and then cover it with the ketchup.

Spread mix into loaf pan and press down so it's compact, not necessarily hard.

Bake at 350 for 40-55 minutes, depending on how well you like it.

Remove from oven and using pot holders, cover the pan with a large flat serving dish and CAREFULLY flip it over. (I do this over the sink "in case".)

The brown sugar will run as bit making it like frosting.
