Ann's Tuna Salad

Introduction

Fruit and nut tuna salad. Fruit and nut tuna salad.
Number of Servings: 3

Ingredients

    Drain can of tuna, put in medium sized mixing bowl and flaked apart.
    Mix together mayonaise, salt and pepper, and lemon juice. Add to tuna and mix well.
    Dice celery and onion, chop almonds and add to tuna mixture.
    Add dried cranberries to mixture and combine well.
    Taste and add salt and/or pepper as needed.
    Place 1/3 to 1/2 cup portion on lettuce or bread.
    Keep remainder in refrigerator up to three days.

Tips

Chop the almonds (substitute walnuts or pecans if you prefer). Substitute raisins or dried cherries for the cranberries if you prefer. Add a teaspoon of lemon to the mayonaise before mixing. Salt and pepper to taste. I prefer green onions but you can use white, yellow or green as you prefer.
