Ramen noodles with beef

Introduction

Ingredients

    1 lb skirt steak or other lean steak, cut into thin strips
    2 packages ramen noodles, cooked, drained, without seasoning
    4 cups beef broth
    1-2 TBS soy sauce
    chopped dry-roasted peanuts (about 1/2 cup total)
    2 cups fresh spinach
    1 cup chopped carrots
    1 tsp sesame oil
    1 TBS canola oil

    Cilantro and lime for garnish if desired

Tips

Additional veggies can be added too - red cabbage can be added with carrots, more tender vegetables towards the end.


Directions

In large wok or skillet, heat oils and add sliced beef, cooking to brown. Push meat aside, add carrots and sautee several minutes until beginning to get tender. Add broth and soy sauce, bring to a boil, reduce to simmer and cook until carrots are tender. Add spinach to wilt, stir in cooked noodles. Serve topped with a sprinkling of chopped peanuts, plus cilantro and a lime wedge if desired.
