Andrea's Black Bean Soup Low-Carb

Introduction

I made this up when looking for a black bean recipe that was low-carb. Ideas were taken from other recipe's that I found, and what I had in my fridge. Number of Servings: 6

Ingredients

    Dried Black Beans, 1/2 cup
    Salt, 1/2 tsp
    Chicken Broth, 2 cup (8 fl oz)

    Veggies:
    Butter, 1/2 Tbs
    Celery, raw, 1/4cup, diced
    Onions, raw, 1/4cup, chopped
    Cabbage, fresh, 1/2 cup, chopped
    Carrots, raw, 1/4 cup, chopped

Directions

Sort and soak beans overnight as directed on package.

The next day, rinse the beans and add a couple of cups of water, salt and the beans to a sauce pan. Simmer for 1 hour.

Meanwhile, in a skillet, sautÚ the onion and celery in butter until soft.

After the hour of simmering, drain off the liquid and add the chicken broth. Then add all veggies and simmer for about 20 minutes or until the cabbage is wilted to your liking.
