Ingredients

    2 Tbs. lemon juice
    4 tsp. Dijon mustard
    4 medium leeks, halved, white and light green parts cut into 1-inch chunks (8 cups)
    3 tbsp olive oil (divided)

Directions

1.clean leeks
2.Preheat oven to 400F. Toss leeks with 2 Tbs. olive oil in bowl. Season with salt and pepper, if desired. Spread leeks on baking sheet and roast 45 minutes, or until golden, turning several times with spatula.
2.Meanwhile whisk together lemon juice, mustard, and remaining 1 Tbs. oil in small bowl. Season with salt and pepper, if desired.
4.Toss leaks with dressing and serve warm
