Cod with Roasted Veggies

Introduction

You can start roasting you vegtables in the pan and then add your fish so it becomes a one dish meal. Easy clean up! You can start roasting you vegtables in the pan and then add your fish so it becomes a one dish meal. Easy clean up!

Ingredients

    1 cod fillet (any whitefish will work)
    1 C. cherry or grape tomatoes
    1 medium size onion, thinly sliced
    1 C. chopped broccoli
    1 Tbsp. olive oil
    (Freely substitute any vegtables you prefer)

Directions

Put vegtables in shallow pan with sides, drizzle with olive oil. Roast in 400 degree oven for 10 minutes. Move veggies around so fillet will set in middle of pan, reduce heat to 350 degrees. Finish baking for 30 minutes or until fish flakes easily.
