Paleo Morning Glory Muffins

Ingredients

2.5 cups almond meal
1 tbsp cinnamon
2 tsp baking soda
1/2 tsp salt
2 cups carrots
1 large apple
1 cup shredded coconut
1 cup raisins
3 eggs
2 tbsp honey
0.25 cup olive oil
1 tsp vanilla

Directions
Preheat oven to 350 degrees
1.) Mix almond meal, cinnamon, baking soda, salt, carrots, and apple.
2.) In separate bowl, whisk eggs, honey, oil, and vanilla
3.) Mix wet and dry ingredients
4.) spool into muffin pan (make sure they are greased first)
Bake 40-50 minutes
Cool for 8-10 min
