Ingredients

    Near East garlic and olive oil pearled couscous (made to package instructons)
    2 TBSP Olive Oil
    1 Cup Chopped Onion
    1/2 Cup Chopped mushrooms
    2 cloves minced garlic
    2tsp of fresh thyme
    1lb ground turkey
    1 yellow summer squash
    2 TBSP Parmesan Cheese
    1 TBSP mozzerella cheese
    6 Bell Peppers (whole with the seeds scooped out)
    Salt & Pepper to taste

Tips

substitute quinoa for the couscous for a gluten free meal also delicious.

Directions


Make Near East Garlic and Olive Oil pearled couscous according to package directions.

Put 2 TBSP Olive oil in a frying pan and heat, add 1 cup chopped onion, 1/2 cup chopped mushroom. After a few minutes add 1 chopped summer squash and 2 cloves of garlic and some fresh thyme. Salt and Pepper to taste. Let the vegies cook for a bit then add your ground turkey. When the turkey is browned and all the liquid evaporated (pour some out if you need too) add the couscous and mix together. Add 2 TBSP of grated parmesan and 1 TBSP of part skim mozzerella cheese and then load into 6 bell peppers. Sprinkle a little once the peppers are filled bake for about 30 minutes to cook the pepper.

Serving Size: makes about 6 moderate sized peppers
