stuffed peppers

Introduction

one of those meals my husband loves. one of those meals my husband loves.
Number of Servings: 8

Ingredients

    1-pound ground turkey 93% lean browned and drained
    26-oz-ragu chunky garden style.. ( can sub different but may change info)
    4- cups brown rice( cooked)
    1- can diced tomatoes with green peppers and onion
    3-cloves garlic , minced
    2- cups onions chopped
    4- bell peppers, cut in half and cleaned out for stuffing.
    1~ cp part skim Shredded Mozzarella

Directions

1.blanch peppers in boiling water for 2-3 min, then soak in ice bath for 30 sec to stop cooking and set aside.
2. Cook rice according to package directions if haven't done already
3. Brown and drain ground turkey.
4.Mix in the rest of ingredients except cheese. Simmer for 10 min to allow flavors to mix.
5.While simmering, spray 9X13 baker with cooking spray .
6. stuff peppers with mixture, place in pan and cover with foil.
4.Bake at 350 F for 40- 45 min.
5.Take foil off and add cheese -1/8 cup to each pepper.Return to oven for 15 min.
6.Serve and enjoy

Serving Size: 8-servings each half is serving
