Mediteranian Salad

Introduction

Love this recipe, I usually make it with pasta. However, I cannot eat the pasta any more and quinoa is much healthier. Love this recipe, I usually make it with pasta. However, I cannot eat the pasta any more and quinoa is much healthier.
Number of Servings: 10

Ingredients

    Ancient Harvest Traditional Whole Grain Quinoa, 1 serving = 1 cup
    Chick Peas, approx. 3 cup
    Cucumber (with peel) - quartered slices
    Tomato, grape 9 oz
    Feta Cheese, 1.25 cup, crumbled
    Onions, raw, .5 medium

    Dressing:
    Vinegar, Red Wine 8 tbsp
    Extra Virgin Olive Oil, 2 tbsp
    Oregano, ground, 1 tsp
    Garlic powder, 1 tsp
    Salt, .5 tsp
    Lime Juice, 1 lime yields

Directions

Bring 2 C water to boil, add in Quinoa and turn down heat. Once Quinoa is cooked (water is almost fully absorbed) remove from heat and allow to cool.

If using dried Garbanzo beans (Chick Peas) put into pressure cooker and cook until soft.

In bowl combine all of salad ingredients: Quinoa, Chick Peas, Chopped Onion, Quartered/Sliced cucumber, Grape Tomatoes (halved), and Feta Cheese.

In separate bowl: Mix Dressing ingredients together.

Pour dressing over salad and mix well.

Cool in the fridge & serve.

Serving Size: Makes approx. 10-2Cup servings
