Black-Bean Picadillo

Ingredients

    2 tsp OLIVE OIL
    1c FROZEN CORN, thawed
    1 tsp GROUND CUMIN
    1/2 tsp CHILI POWDER
    2 (15-oz) cans BLACK BEANS
    1 1/2c MARINARA SAUCE
    2/3c PIMIENTO-STUFFED GREEN OLIVES
    1/2c GOLDEN RAISINS
    1/4 tsp SALT

    WHITE RICE (optional)

Directions

HEAT- 2 tsp OLIVE OIL in 12 in. nonstick skillet on med.

ADD- 1c FROZEN CORN, thawed; 1 tsp GROUND CUMIN
1/2 tsp CHILI POWDER

COOK- 2 min. or until corn is heated through, stirring.

STIR- in 2 (15-oz) cans BLACK BEANS, rinsed and drained; 1 1/2c MARINARA SAUCE; 2/3c PIMIENTO-STUFFED GREEN OLIVES, sliced; 1/2c GOLDEN RAISINS and 1/4 tsp SALT. Heat to simmering.

SIMMER- 5 min. or until slightly reduced, stirring occasionally.

SERVE- with cooked white rice
