Whole Wheat Bialys

Introduction

it's a major modification job... just for fun. it's a major modification job... just for fun.

Ingredients

    2 cups white whole-wheat flour
    1 cup whole wheat flour
    1 t yeast
    1 t salt
    1 cup (+/-) lukewarm water
    4 T diced onion (or more if desired)
    1 T chia seed
    1 T poppy seed
    1 t butter (optional)

Tips

depending on how your oven heats and how done you want these you might need more or less time... keep an eye on it! 10 mins was perfect for mine to be lightly golden on bottom and mostly not on top, but cooked through nicely.


Directions

mix flours, yeast, salt. stir in warm water and work dough until it's smooth. cover & set aside until risen (30 mins or so)

mix onion and seeds together. cook onion first if desired, using the butter or substitute olive oil...

knead dough and divide into 10-12 even-sized pieces. flatten to 3-4 inch diameter circles. Lay on cookie sheet dusted with cornmeal. let rise (about 30 mins)

flatten center of dough circles, leaving a 1-inch ring around the outside. 'dock' (poke holes with a fork or something) or slash the centers so they won't rise and toss off the onion mixture. place a small spoonful of onion mixture in each center. dot with a tiny bit of butter if desired(or if you cooked the onions first they are good to go).
preheat oven to 425, and let the bialys rise again while it's heating.

place in oven for 5 minutes, then rotate the cookie sheet(s) and switch racks and cook 5 minutes more. {Some recipes recommend weighting the bialys with another cookie sheet during the first 5 minutes of cooking. depends if you want them more dense/chewy or more fluffy.}
