Loaded Potato Soup

Introduction

Creamy loaded potato soup with all the flavor of a decadent loaded soup, but with a fraction of the calories. Creamy loaded potato soup with all the flavor of a decadent loaded soup, but with a fraction of the calories.
Number of Servings: 4

Ingredients

    1-2 medium russett potatoes
    1 quart low sodium chicken broth
    2 cups of water
    1 can 98% fat free cream of chicken (small can)
    1 tsp onion powder
    1/2 - 1 tsp celery seeds
    Salt and pepper to taste
    1 - 2 tbsp flour
    4 Tbsp of cheese
    3 strips crumbled bacon

Directions

peel and dice potatoes and add to a small to medium dutch oven with water, broth, salt and pepper. When potatoes are cooked add onion powder, celery seeds, and cream of chicken soup. Then make a paste of flour and water and add to soup to thicken add more or less dependent upon how thick you want your soup. Simmer on low 15 minutes until heated through and the flour cooks out. Serve in bowls topped with shredded cheddar and crumbled bacon.
