Adam's daikon radish salad

Ingredients

    1 7-inch daikon (oriental) radish
    1 medium carrot
    1 tsp grated fresh ginger
    1 tbsp olive oil
    3 tbsp apple cider vinegar
    1 tsp salt

Tips

This can be made ahead and stored in the fridge, you'll lose a bit of the crunch but the flavours will blend better


Directions

Cut the radish in 3-inch sections lengthwise and julienne thinly. Marinate in a bowl of cold water with salt. Mix olive oil, vinegar and ginger and set aside. Thinly julienne the carrot.
Drain radish, add carrot and dressing and let rest for about half hour before serving

Serving Size: makes 4 half-cup servings
