Thai Noodle Soup

Ingredients



    Onions, raw, 1 cup, chopped
    Carrots, raw, 1 medium
    Mushrooms, fresh, 2 cup, pieces or slices
    Garlic, 3 clove
    *Bok Choy, raw-shreaded, 2 cup
    Vegetable Broth, 4 cup
    *Soy Sauce, 2 tbsp
    Limes, 1 fruit (2" dia) juice and zest
    Hot chile pepers, 1 pepper
    Rice Noodles, 4 cup
    Mung Beans, 1 cup

Directions

Chop all veggies, fry in big pot. Add broth and lime juice. Pour into bowls of cooked brown rice noodles. Top with mung beans (and cilantro if you like).

Serving Size: Makes 4 bowls
