Bon's Baked Zucchini Asparagus

Introduction

New twist on lasagna without pasta or ricotta mix. Parmesan used but can be omitted to be vegan. New twist on lasagna without pasta or ricotta mix. Parmesan used but can be omitted to be vegan.
Number of Servings: 6

Ingredients

    3-4 medium organic zucchini, sliced flat
    1 bunch of organic asparagus, ends trimmed
    1 head of organic garlic, finely shaved
    1 container of Cedars tomato bruschetta
    1 can of plain tomato sauce, no salt or sugar added
    1 tbsp of canola oil or canola spray

Directions

Canola oil or canola spray bottom of 9x9 square glass baking dish
Create two layers each of: zucchini, garlic, tomato bruschetta, asparagus and tomato sauce & Parmesan.
Cover with fine foil, bake at 400 for 45 minutes.

Serving Size: Makes about 6 servings, approx. 1 cup
