Number of Servings: 1

Ingredients

    1.5 oz Low fat Feta Cheese
    .5 Cup of Rinsed Canned Chickpeas
    2 med stalks of celery, sliced
    35 grams (about .33 c dry) Macaroni, cooked
    I Tbsp. light dressing of your choice
    3 Black olives ( if liked)

    Herbs de Provence or Oregano or parsley if wanted

Tips

Vegans can easily sub vegan cheese and dressing. Also, play with the herbs to your liking.


Directions

Start cooking the macaroni in a small pot. Meanwhile, chop celery, feta and olives and put them in a med bowl. Rinse and add canned chickpeas (garbanzo). When cooked, rinse macaroni in cold water, drain well and add to bowl. Toss all with measured dressing. Chill to let flavors marry, of just nom-nom it right away.

Serving Size: Makes ONE serving, doubles easily
