6 medium potatoes (with peels)
3 cups skim milk (divided)
4 oz. neufchatel cheese, softened to room temp.
2 Tbl butter, softened to room temp.
salt and pepper to taste
Whisk together the neufchatel and butter. Add a small amount of the remaining milk and whisk until smooth. Continue adding milk and whisking until all the milk is incorporated. Pour the mixture over the potatoes. Add salt and pepper. Heat through and continue heating until potatoes are soft enough to mash. Mash them to desired lumpiness.
