Goya Low Sodium Chickpeas (822 grams-lg can)
1 cup cooked quinoa
3 medium ripe tomatoes, diced
1 medium red onion, diced
1 cup diced celery
6 cloves of garlic, pressed/minced
Ginger root, shaved approx 1 teaspoon or more to taste
1 cup organic low sodium vegetable broth
1 cuptomato sauce, no sodium added
Spices: tumeric, curry, cayenne, approx 1 teaspoon each
Cut up everything before begining.
Have all ingredients prepped and ready.
In large skillet; combine onion, celery, garlic, and vegetable broth, on medium heat cook until softened (approximately 10 mins)
Add tomatoes, chickpeas, cooked quinoa, ginger, spices and tomato sauce. Cook for an additional 20 minutes on low heat.
