Introduction

Cornbread Muffins Cornbread Muffins
Number of Servings: 12

Ingredients

    1 Cup Milk (2% or Skim Milk)
    1 Tablespoon oil (Canola)
    1 Large Egg
    1 1/2 Cups of Self-Rising Corn Meal Mix


Directions

Preheat oven to 425F. Spray muffin pan with cooking spray. Measure corn meal into mixing bowl. Beat together egg, oil and milk. Stir into corn meal until thoroughly mixed. Pour into greased 12 cup muffin pan. Bake 15-20 minutes or until done.
