Introduction

Couldn't decide what to make for supper one day so just threw this together. I just sprinkled the cumin and pepper so I don't have exact measurements. I served it with mixed veggies and Mexican rice (not included in calorie count). Couldn't decide what to make for supper one day so just threw this together. Number of Servings: 4

Ingredients

    4 tilapia filets
    black pepper to taste
    cumin to taste
    1/4 c chopped onion
    1 tsp minced garlic
    10 oz tomatoes & diced chiles
    1 tbsp. olive oil

Tips

This could just as easily be made on top of the stove.


Directions

Line a baking dish with foil. Put olive oil in the bottom of the pan, lay tilapia filets flat. Sprinkle on pepper and cumin to taste. Mix onions, garlic and tomatoes & chiles together and pour over tilapia filets. Bake at 400 degrees 5 - 15 minutes (depending on if tilapia is thawed or frozen) until fish flakes apart with a fork.

Serving Size: 1 filet and 1/4 sauce
