Spicy Mexican Chicken soup

Introduction

This is pretty spicy, and VERY filling. Great for those cold winter days. This is pretty spicy, and VERY filling. Great for those cold winter days.
Number of Servings: 6

Ingredients

    2 cups carrots
    1 cup celery
    1 medium sweet potato cut into 1-2" cubes
    1 small bag frozen green beans
    1 medium onion, chopped
    1 clove garlic, minced
    1 can rotel tomatoes and green chilis
    1 can black beans, drained and rinsed
    juice of one lime
    1 tblsp chili powder
    1 tsp ground cumin
    1/2 tsp. cayenne pepper (or to taste)
    2 boneless skinless chicken breast, cut up, uncooked

Directions

Put everything in slow cooker, cook 3-4 hours on high, or 6-8 hours on low. Optional -- a little shreadded cheese on top (not included in nutrition numbers).
