Roast Pork with Maple Mustard Glaze

3 lb pork loin roast
3/4 cup real maple syrup
4 tablespoons dijon-style mustard
2-1/2 tablespoons soy sauce
2-1/2 tablespoons cider vinegar
salt and pepper to taste

Directions
Preheat the oven to 425 degrees. Stir together the maple syrup, mustard, vinegar and soy sauce in a small bowl. Line a shallow roasting pan with aluminum foil Place pork roast in the pan. Sprinkle with salt and pepper. Spread glaze evenly over pork roast.
Roast pork at 425 uncovered for 30 minutes. Remove roast from oven and baste liberally with glaze. Reduce oven to 350 degrees. Roast pork until internal temperature measured with a meat thermometer reaches 160 degrees, about 1-1/2 hours. Remove from oven and allow roast to rest about 10-15 minutes before slicing to serve.
