Chicken Meatloaf in the Crock-Pot

Ingredients

    10 raw chicken breasts
    2 cans mixed vegetables
    2 cups chopped onions
    1.5 packages (6 oz. each) chicken stuffing mix
    .25 cup Knorr Chicken Bouillon
    1 Tbls ground fennel seed
    1 tsp ground garlic
    2 tsp salt
    1 tsp black pepper
    1 tsp cinnamon
    2 cups water
    Pam cooking spray

Tips

Can add ketchup (not in totals) like with regular meatloaf. My husband likes chili sauce on his!


Directions

Remove fat from breasts then ground them up. I did it using my food processor. I found it best to do 2 breasts or less at a time. When done grinding breasts; mix all ingredients in a large bowl adding the water last. Mix well. Spray Crock-Pot with Pam. Put 1/2 of mixture into a 5 quart Crock-Pot, making a divide down the middle, top to bottom. (helps loaf cook faster and more even). Freeze other half or cook it after 1st one done. Cook for 4 hours or until done.

Serving Size: Makes 2 "loaves" of 8 servings each. 16 total servings
