Bosch Chiladas

Introduction

I was reading a Harry Bosch novel and something he was making gave me the idea for this. It is very good even without the tortillas and cheese, just the meat, sauce and veggies. Number of Servings: 6

Ingredients

    Shredded Chicken - About 2 cups (I'm not sure of the exact amount. I boiled a whole chicken, made chicken soup out of part of it and used the rest for this.)

    1/2 Onion, chopped

    1/2 Red Bell Pepper, chopped

    Garlic powder

    1 Can Mild Enchilada Sauce

    2 Tomatoes, chopped

    8 corn tortillas

    Shredded Cheese

Tips

Just the chicken mixture, by itself, is really good also and a good way to cut down on calories. If I was making it for myself, that is how I would eat it.


Directions

Saute the onions, garlic and bell pepper. Add the shredded chicken, enchilada sauce and chopped tomatoes. Place 4 of the corn tortillas in the bottom of a glass baking dish. Cover with half the chicken and sauce, add another layer of tortillas and the rest of the chicken. Cover with shredded cheese. Bake at 350 for about 30 minutes (or less, mainly to let cheese melt and tortillas soften).

Serving Size: Makes about 6 servings
