2 tsp margarine 1 1/2lb skinless boneless chicken breasts 1/2 cup pearl onions, peeled and quartered 2 garlic cloves, minced 2 cups diced zucchini 2 cups mushrooms, quartered 2 tbsp lemon juice 3/4 cup Chicken broth 2 tsp enriched flour Salt and pepper to taste 2 tsp white wine
Melt margarine in skillet; add chicken parts and saute until browned. Remove and keep warm. In same pan saute onions and garlic until onions are translucent. Add zucchini and mushrooms and sprinkle with lemon juice; cook, stirring occasionally, until just tender. In small bowl gradually add broth to flour, stirring constantly until combined; add to vegetable mixture and cook, stirring constantly until thickened. Add chicken, salt, and pepper. Cover and simmer for 15 min. Add white wine and serve.
