Freedoms healthier fried chicken

Introduction

My husband keeps hounding me to make fried chicken. Since my traditional fried chicken is a heart attack waiting to happen I came up with this and you can barely tell I've made a change. The use of small amounts of olive oil is to get those good fats in your diet, and the spray is to make sure theres enough to brown the chicken without packing on the calories. Ingredients

    1 chicken breast per person
    .5 tsp olive oil per person
    .125 C. steel cut oats per person
    Cooking spray
    Seasoned salt and pepper to taste

Directions

Put steel cut oats in blender and blend until flour consistency. Spray non stick cooking spray into pan, then add oil. Season chicken then coat with steal cut oat flour, while pan is heating over med-low heat. When pan is hot, place coated chicken in hot oil/spray. Cook on each side for 10 mins or until golden brown.
