Ingredients

3 lbs. chicken, cut into serving pieces
Paprika
2 T butter spread
2 tsp. seasalt
1/8 tsp cinnamon
1/8 tsp. ground ginger
.5 C raisins
1.5 C orange juice
cornstarch (for thickening)
1 C water
1 fresh orange, peeled and sectioned.

Directions
Cut up thawed, boneless chicken into serving size pieces. Sprinkle chicken lightly with paprika. Heat pressure cooker over burner. Add buttery spread; brown chicken. (May have to do in portions depending on size of cooker.) Season with combined salt, cinnamon, and ginger. Add raisins and orange juice. Close cover securely. Place pressure regulator on vent pipe. COOK 10 MINUTES. Cool pressure cooker at once. Remove chicken from pressure cooker and set aside. Combine cornstarch (3-4 T) with water in covered jar/container and shake to mix well. Add liquid to pressure cooker. Heat, stirring constantly until sauce has thickened. Pour sauce over chicken and garnish with orange sections. Serve on white rice or other grain as desired. 4 to 6 servings.
