Number of Servings: 4

Ingredients

    Whole Wheat Spaghetti, cooked (pasta), 1 cup
    Millet, .25 cup
    Spinach, fresh, 1 cup
    Oikos Organic Greek Yogurt, Plain (5.3 oz), 1 serving
    1 cucumber (8-1/4")
    Black Olives, Black Pearls, medium pitted, 5 olives, 2 serving
    Shrimp, cooked, 10 large
    *Peppers, sweet, red, fresh, 2 medium (approx 2-3/4" long, 2-1/2"
    Sweet peppers (bell), 2 medium (approx 2-3/4" long, 2-1/2"

Tips

I freeze them stuffed. At serving time I take the thawed peppers and halve them. Each serving is 1/2 a green and 1/2 red. May top with cheese.


Directions

cook pasta. add shrimp last couple of minutes. Drain
You may cook peppers in the same water for 5 minutes.
gently mix together all ingredients except bell peppers.
Stuff the peppers.
Bake 30 mins at 350.
