Turkey Meatloaf

Number of Servings: 6

Ingredients

    1/4 c Orange Veggie Puree
    2 Tbsp tomato paste
    4 Tbsp ketchup, divided
    3 Tbsp Chia Gel
    1/2 c finely minced or pureed onion
    1 tsp Worcestershire sauce
    1/2 c steel cut oats, ground in food processor
    1/3 c oat bran
    1 lbs lean ground turkey (99% fat free)

Directions

Preheat over to 350 degrees and spray loaf pan with cooking spray. In a large bowl, combine orange puree & tomato paste, mixing well. Mix in 2 Tbsp of ketchup, Chia gel, onion, Worcestershire, oats, oat bran, and salt.

Add turkey to mixture and mix well with hands until combined, then put into loaf pan. Glaze top of loaf with remaining ketchup.

Bake for 50-55 minutes, until the internal temperature is 160 degrees.

Makes 6 generous slices.
