1 small onion sliced 2 cloves garlic, minced 1 Tbsp extra virgin olive oil
1 package frozen spinach, thawed and drained
2 eggs 3 egg whites 1/3 cup evaporated milk
1/2 cup shredded mozzarella
In an oven proof pan, heat the olive oil and cook the onion and garlic until soft. Add the spinach. Beat the eggs, egg whites and milk in a bowl. Pour over the mixture and cook for 5 - 7 minutes until set. Sprinkle on the cheese. Bake for 5 more minutes or until set in a 350 degree oven. Serve with salsa for frittata.
