Beef & Bean Enchilada Pie

Ingredients

    1/2 lb ground beef, lean
    1 cup black beans, drained
    1 cup canned sweet corn, drained
    1/2 cup salsa
    1/2 cup FF cream cheese
    1/2 cup sour cream, FF or lowfat
    1 cup Sargento 4 cheese Mexican cheese
    2 low carb La Banderita soft taco tortilla
    1 cup Old El Paso Mild Enchilada Sauce
    Old El Paso Taco Seasoning



Tips

You can substitute 1 cup cooked, diced chicken for the beef to save around 40 calories per serving.


Directions

Brown ground beef, drain and add Taco seasoning. Add Black Beans, corn and salsa. Mix together.

In a separate bowl, mix cream cheese and sour cream with a splash of milk to thin just enough to make it spreadable.

Place 1/2 beef, bean, corn & salsa mixture into a deep dish pie plate. Spread out to cover bottom of plate. Top with a Tortilla.

Place the remaining beef, bean mixture on the tortilla spread out. Pour the Enchilada sauce over the bean mixture. Top with the other Tortilla.

Place cream cheese mixture on top of the Tortilla and spread out to cover.

Cover with aluminum foil and bake in 350 degree oven for about 30 minutes. Take out, uncover and spread the Sargento cheese on top. Put back in oven to melt the cheese.

Serving Size: makes 8 "pie size" servings
