Oat Flour Pancakes

Introduction

Ingredients

    My list is an approximation as I hardly ever actually measure anything. I just started a new diet that is pretty simple. I can eat anything I want as long as it has no GMO's or any processed food products (processed isn't food!). I've also excluded most dairy products as well as wheat of any kind. I keep a few cans of nonfat evaporated milk in the cupboard and you can replace the rice milk with it. I do make my own organic rice milk. Here is the recipe...

    1st take a couple of cups of oat flour (grind rolled oats), about a 1/2 cup of flax seed meal, about a teaspoon of baking powder and 1 egg. Add about a 1/4 cup of canola oil. I use a whisk and add rice milk until I get a pretty smooth and pour-able consistency. Cook in a pan coated with canola oil at med high and serve with natural maple syrup.

    You can add cinnamon, nuts and/or fruit before cooking......
