1 block extra firm tofu - dried
1/2 c peanut butter
1 can coconut milk
1 poblano pepper - chopped
1/2 c quinoa
2 TBSP EVOO
1 tsp salt
1/2 tsp coriander
1 TBSP crushed red pepper flakes
Saute poblano, crushed red pepper, and tofu in olive oil until pepper is soft. Add coconut milk, peanut butter, salt and coriander and simmer until quinoa is ready.
Serving Size: Makes about 4 - 2 cup servings
