Chicken Stew with Veggies & Spinach

Ingredients

    3 skinless, boneless chicken breasts, cubed
    2 sweet potatoes, peeled and cubed
    1 beet, peeled and cubed
    1 cup cauliflower florets
    1 cup onion, chopped
    1 cup frozen peas
    1 cup garbanzo beans, drained
    1 cup black beans, drained
    1 bunch of fresh spinach, stems removed
    1/4 t. pepper
    1/2 t. garlic powder
    1/2 t. curry powder
    2 T. coconut oil

Tips

I add additional beets, and use only one sweet potato, may vary items to your liking.


Directions

Place everything in a crock pot, cook on low for 4-6 hours.
