4 catfish fillets
1 can diced tomatoes
1 tsp Louisiana Cajun Seasoning
Preheat oven to 350 degrees.
Lightly rub foil with olive oil. Put can diced tomatoes on foil. Add catfish fillets on top. Sprinkle each fillet with Cajun seasonings. (more or less depending on your taste.)
Fold the foil around the fish so that the juices are held in.
Bake for 30 minutes.
