Introduction

Ingredients

    1 small cucumber or half a cucumber. Peeled, sliced into circles and quartered
    1 medium tomato, diced large
    3 green onions, chopped
    1 medium avocado, peeled, skinned, seeded and diced large
    3 oz of Athenos reduced fat feta cheese, crumbled
    5 Tblsp good quality balsamic vinegar

Directions

chopping and dicing, no cooking necessary.
