Cocoa Flax Muffins

Introduction

Not the most amazing muffins I've ever made - but not too bad at all for a low fat/low cal chocolate muffin! Not the most amazing muffins I've ever made - but not too bad at all for a low fat/low cal chocolate muffin!
Number of Servings: 24

Ingredients

    2 C Old fashioned rolled oats (do not substitute instant)
    2 C Skim 1% milk
    2 Eggs
    1 1/3 C Unsweetened applesauce
    2/3 C Brown sugar
    2/3 C Splenda
    2 tsp baking powder
    8 Tbsp Cocoa powder (unsweetened)
    1/2 C flax seeds

Tips

These Muffins are very moist - they almost appear to be underdone, but when cool they set up. When completely cool, they release from paper liner easier.


Directions

Soak oats in milk for at least one hour before mixing additional ingredients.

Preheat oven to 400 degrees F

Line muffin tin with paper liners (I do not suggest using cooking spray rather than paper liners for this recipe).

Combine the oat mixture with applesauce & eggs. Mix well.

Mix remaining dry ingredients in separate bowl.

Add dry ingredients to oatmeal mixture & mix well.

Add 1/4 C batter to each muffin cup.
Bake 20 - 25 minutes.

Serving Size: makes 24 (1/4 C batter per muffin)
