Introduction

I had some pork that needed to be cooked and I love casseroles, so I looked in the cabinet and fridge and Voila`. I had some pork that needed to be cooked and I love casseroles, so I looked in the cabinet and fridge and Voila`.

Ingredients

    Peas, frozen, 1 package (10 oz)
    Yellow Sweet Corn, Canned, 1 can (12 oz), I use low-sodium
    Barilla Plus Rotini (2 oz, 56 grams), 4 oz
    *Healthy Request Cream of Mushroom Soup, 1.25 cup
    *Soy Milk Plain Light, 1 cup
    Pork Tenderloin, 16 oz (I buy already diced)
    *Progresso Bread Crumbs - Italian Style, 0.5 cup
    *Colby and Monterey Jack Cheese shredded, 1.5 cup
    spice as desired ( I use garlic powder, onion powder, sage, italian seasoning, black pepper, and paprika.)

Directions

Preheat oven to 375 degrees.

In pan, boil rotini until desired texture.

In long, rectangular Pyrex dish, place diced pork, corn, thawed peas, and cooked Rotini.

Season to taste, mix thoroughly so that the seasoning is on all the ingredients.

Add soymilk and cream of mushroom soup. Mix until soup is liquified and evenly mixed through the ingredients.

Sprinkle bread crumbs across the top, spread evenly.

Top with cheese.

Cook in oven for 90 mins.

Serving Size: makes 12, 1 cup servings
