Lentil Soup

Number of Servings: 4

Ingredients

    2 cups red lentils
    1 medium onion (chopped)
    1 cup cherry tomatoes
    I vegetalbe stock cube
    1 tbsp olive oil
    1.5 - 2 litres of water

Directions

Sautee the onion in the olive oil
Add the lentils and sautee for another few minutes - stir to stop them sticking
Add tomatoes and stir
Add stock cube and water - at least a litre of water, keep an eye on it as it may dry out. Add more water depending on how thick a soup you like
Simmer, stirring regularly, for around 25 -35 minutes until the lentils have mushed into the water
