Poor Man Spaghetti

Introduction

Number of Servings: 6

Ingredients

    1 package angel hair or thin spaghetti; cooked according to package directions.
    1 lb. bacon; cooked and diced
    2 or 3 cans diced tomatoes(depending on how much sauce you like)
    1 can tomato sauce-14.5 oz size
    1 large onion; chopped
    1/4 tsp pepper
    salt to taste

Tips

For a thinner sauce use more diced tomatoes and small can of tomato sauce.


Directions

cut bacon into 1 inch strips and fry in large skillet until almost crisp.
Remove from skillet and drain off most of the grease leaving approximately 2 TBSP.
Saute the chopped onion in the bacon grease.
Place the bacon back into the skillet.
Add the tomatoes, tomato sauce and salt and pepper. Bring to boil and then place on simmer for 20 minutes. While the sauce is cooking prepare the pasta according to the package instructions.
Drain the pasta and place back into pot.
Pour some sauce in the bottom of the pot and add some pasta. keep layering the sauce and pasta until all is in the pot. Stir gently to incorporate the ingredients. Serve warm.

Serving Size: makes 6 2-cup servings
