Shea's BBQ Chicken

Introduction

This is my all time favorite thing to make. I make a bunch of chicen in the beginning of the week to have it as lunch meat the whole week! This is my all time favorite thing to make. I make a bunch of chicen in the beginning of the week to have it as lunch meat the whole week!
Number of Servings: 4

Ingredients

    1. Barbecue Sauce 1 Cup Open Pit, 1 Cup Sweet Baby Rays. (2 cups total)

    2. Olive Oil 2 Tbsp

    3. Chicken Breast, Skinless (recipe for 2 breasts 0.5 servings each 4 people total)

    4. Garlic 3 Cloves

    5. Mushrooms sliced-bundle of mushrooms (4 cups) they are being caramelized and they shrink down a lot during the cooking.

    6. Onions-Sweet and chopped 2 onions

    7. White Wine 2 tbsp

    8. Butter- Unsalted 2 tbsp

    9. Salt - 2 Pinch

    10. Pepper - 2 Pinch




Tips

I like to cook this recipe with brown rice to go under the chicken. Its really great with BQQ sauce, Chicken and rice mix.


Directions

FIrst prep your chicken, clean it and make sure there is as little fat as possible. I like to use organic skinless chicken breast, I think it has the best taste. In a skillet put the olive oil and garlic on the stove and turn on med-high heat, let it warm up till the garlic starts to turn a light brown. Place the chicken on the olive oil/garlic mix and let sit for 1 min on each side. After turning add pinch of salt and black pepper.

Let chicken cook evenly on both sides until you see no more raw chicken on the sides of the chicken breasts. Turn med-high heat down to low and add open pit and sweet baby rays BBQ sauce. Place lid on pan and let sit for 30 min while turing the chicken over and over so it can cook evenly.

After placing lid on the chicken start to cook the mushrooms. Grab a deep pan and add Sliced Mushrooms, Chopped onions, olive oil, white wine, butter, salt and pepper. Turn burners on high. As the everything starts to cook keep mixing with a wooden spoon. I like to keep the top on this when im not looking to keep all flavor into the pan. This will continue to cook for 30 min as the white mushrooms and white onions start to turn dark brown- the idea is to caramelize this dish as a topping for the chicken.

Once Chicken is completely cooked used mushrooms as a topping.
