IntroductionI found the vegi soup mix on sale at Big Lots and thought I'd give it a try - boosted the nutrition adding fresh celery, carrots and a can of diced tomatoes. I found the vegi soup mix on sale at Big Lots and thought I'd give it a try - boosted the nutrition adding fresh celery, carrots and a can of diced tomatoes.
1 cup Bob's Red Mill Vegi Soup mix dry
3/4 cup diced Celery including leaves
2 large carrots sliced rather thin
1 Can Petite Cut tomatoes (14.5 oz)
4 cups of water
I added a little water when it was done to bring it up to 6 full cups. Add salt to taste - doesn't need much.
add the can of diced tomatoes
Simmer 30 minutes
Add the carrots and celery
Simmer another 30 minutes or until veggies are soft.
Serving Size: about 5 one cup servings - I'll adjust when it's done and I measure it out.
